This is tea is pure ambrosia. So drinkable, it has become my every-evening tea. It has an incredibly smooth texture and lush, fragrant bouquet that I can not compare it to any other tea. Floral sweetness might be reminiscent of jasmine but much less bitter. A distinctive pleasure to drink. I do not re-use the leaves however because I have not found the flavor of the second pot is as nice as the first. It is pricey - but represents a good value.

This tea is a very easy drinking, smooth and tasty Oolong. I use it as my every day tea now and I don't mind the price tag as it's refreshing and flavoursome and I always get more then one brew from the leaves. Canton tea never fail to impress me with their selections.

"Third infusion (forty seconds): Wow, the “gold” in this tea never wanted to let up – like, ever. It certainly lives up to its name. On first whiff, I was instantly reminded of a green or light-roasted Ti Guanyin, only less refined. The first sip was exquisitely balanced between floral and creamy textures and tastes. " If I were to give this tea a musical label, I would say she is a mezzo-soprano, with plenty of high (but not overly high) notes and a powerful middle register. There is little to no bitterness, and I can't discern any distinguishing low notes (which one would usually associate with, say, an Assam or other black teas). It's quite strong and bright, like hot sunlight filtered through a latticework screen...."

This is very much a green oolong, not sweet, not too bitter.

This tea really reminds me of crisp, fresh cut grass.

Good for multiple infusions. The bitterness fades with each infusion, making this oolong more enjoyable the further you go. Try it, Experiment. Enjoy!

Yellow Gold is one of four famous Anxi cultivars. The finished tea can be recognised by its yellow stems. This is one of the few which is still artisan produced using traditional skills, as Anxi Oolongs have become so popular that the majority are produced on a near-industrial scale.

THE PROCESS

The making process starts with withering in a cooled room, when the natural fragrance of the leaves becomes apparent. This is followed by gentle tumbling to bruise the leaf edges, allowing a small amount of oxidation to take place. The leaves are then heated to disable the enzymes and end the oxidation. The process of shaping now begins – the leaves are packed into cotton sacks, which are then tied tightly before being rolled and squeezed. This slowly twists the leaves inside the bags into the ball shape, and they are finally baked to fix the leaves and bring out the flavour. It is quite common for the teas to be re-baked prior to delivery.

The finished tea has the distinctive ball shape, also known as ‘dragonfly head’. The balls slowly unfurl when infused, and the purple tinge to the leave edges shows where the bruising and oxidation took place. The degree of oxidation is small, maybe 15%, and this is why the liquors are light and greenish in colour, with such a floral aroma and flavour.
