Introduction

Ali Shan is a relatively recent addition to Taiwan’s Oolong Tea producing areas, and has been cultivated since the 1990s. It is grown high in the mountains of Ali in Chiayi county in south east Taiwan and has quickly established a reputation as one of the best Oolongs available. Ali Shan is a balled or ‘fisted’ Oolong which produces a delicious pale yellow-green liquor with a complex rich, toasty yet sweet flavour.

Origin

Panlu, Alishan town, Chiayi county. Ali Shan comprises 16 peaks at elevations from 1000 to 2600 meters. Ali Shan Tea is grown at around 1200 meters.

Varietal: Qingxin cultivar

Processing 

The cool misty climate and rich soil of the mountain area account for the intense flavour of this tea. The high altitude and clean, moist mountain air, and short growing season promote the slow growth that concentrates the intense flavours of this tea. Ali Shan is produced by hand only and is a semi-oxidised tea: withered, tossed, and lightly roasted before being rolled into loose balls. This Oolong is relatively lightly oxidised – ie closer to a Green Tea than a Black - to preserve the wonderful flavours of the leaves.

Tasting notes

Ali Shan yields a lovely pale-yellow liquor that is intensely fresh-tasting with a rich buttery sweetness that lasts through several infusions.

Brewing instructions

Brew with filtered water at 195°F or 90°C. Use around one teaspoon of tea per serving. Ali Shan brews very easily in a cup or infuser of your choice. Steep for 1 - 2 minutes.
