Northern Fujian

Varietal: Da Bai (Big White) cultivar

Processing

Spring Green Tea is made in the usual way from the Dai Bai cultivar, then rolled into a pearl shape by hand and stored to await the Jasmine harvest of the summer. The tea is then suffused with fresh Jasmine flowers, which are picked at night when they are open. The pearls are either overlaid with the petals or stored on alternate trays in a special temperature controlled room. The suffusion process is repeated five or six times with fresh Jasmine petals to create an intense floral aroma.

Tasting notes

The Jasmine Pearls produce a light greeny-yellow coloured liquor, which has the aroma of fresh Green Tea spiked with the intense floral notes of Jasmine. Flavours of sweet honey and aromatic flowers predominate, with the Jasmine providing a perfect complement to the vegetal flavours of the Green Tea.

Brewing instructions

Brew in a glass, cup, Gaiwan or infuser. Use 5 - 6 pearls per serving with water temperature 75 - 80°C: infuse for around 3 minutes.
