When brewing Silver Needle it is absolutely essential to use good water - filtered or mineral - and to brew cool, around 80°C. Unfiltered tap water will impair the delicate flavour, and water too hot will dissolve the tannins in the buds. Definitely brew more than once. The second infusion will bring out more of the soft, sweet flavour.
