I continue to be impressed by the Canton Tea Company teas. As a category, white teas are not my first choice. I have found most white teas to be either too musty or too bland for my taste.
I ordered quite a few sample packets from Canton Tea Company to try. I saved this white tea for last because I was pretty sure that it would be just another white tea. Well, I was quite surprised by this White Peony Bai Mu Dan. It is sweet and mellow, without being musty. It is much more interesting than most other whites I have tasted because it has a number of flavor notes which change with the cooling of the tea. It also has a nice lingering sweetness that I have not experienced with other white teas.
Next, I look forward to sampling the Canton Tea Ye Sheng Wild White Tea, but I highly recommend this White Peony tea to anyone wishing to explore the different kinds of teas.Be sure to brew this tea at a lower temperature than most other teas: recommended by Canton Tea at 75C/167F for 2-3 minutes.
